Diet May Affect Alzheimer's Risk

    Eating large quantities of saturated fats can considerably increase the chances of acquiring Alzheimer's disease, according to a study conducted at Columbia University.  The study, which appeared in the Archives of Neurology, involved 815 Chicago residents aged 65 and older who were asked about their eating habits.  Follow-up tests about four years later discovered that 131 of the participants had developed Alzheimer's.  People who reported eating larger amounts of saturated fats, primarily found in meats and butter, had twice the risk of developing Alzheimer's than those who consumed smaller amounts.  Conversely, people who consumed larger quantities of polyunsaturated fats, found mostly in vegetables and nuts, had a 70% reduction in Alzheimer's risk.
