Organic Soup for the Soul

    A steaming bowl of chicken soup on a blustery day has been a mainstay of Dr. Mom's medicine cabinet for years.  But according to research reported in the New Scientist magazine, eating organic soups instead of conventional ones may have long-term health benefits beyond cold and flu season.  Researchers found that organic soups help prevent heart disease and some forms of cancer, a result of their higher levels of salicylic acid.  Scientists at the Scottish university analyzed 11 brands of organic soup and compared the levels of salicylic acid, a compound known to prevent arterial hardening, to levels found in similar conventional offerings.  Organic varieties had as much as six times more.  Organic carrot and coriander soups had the highest levels.
