Spinach Salad
with Blueberries and Walnuts

  • 1 lb spinach leaves

  • 1 small red onion, thinly sliced

  • 1/2 cup chopped walnuts

  • 1/2 cup fresh blueberries

  • 1/4 cup crumbled feta cheese

  • 2 Tbs. olive oil

  • 1 Tbs. balsamic vinegar

    In a medium bowl toss together spinach, red onion and chopped walnuts. Add blueberries and feta cheese. In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over salad and toss gently to coat. Serve immediately. Serves 4
